Grain School 2021

For the last 5 years, Grain School at the University of Colorado Colorado Springs (UCCS) has brought a community together ranging from grain growers, millers, maltsters, brewers, chefs, educators, scientists, and students to share and complement knowledge and skills and build business relations in relevant topics. These topics have included whole and heritage grains and their relationship to health, nutrition, dietary fiber, and the microbiome, environment and climate change issues related to agriculture, and topics of biodiversity, grain’s role in sustainable farming practices, and the newest in crop science to leverage the traits of old varieties of grain for nutrition and flavor in more modern strains.

Grain School overview

Grain School Online

Grain School is now moving into an online learning platform, with a first-time launch in February 2021. Due to the importance of grain in both people’s diets and sustainable agriculture, Grain School Online will be developed as foundational course that allows students to gain the necessary knowledge in grain from production to consumption. Topics include history and culture, biology, crop and cereal sciences, quality and safety standards, processing applications from grain to flour, cereals to breads, nixtamal to tortillas, malts to brews and grain to plates. The format for Grain School online will be hybrid, with online and in the “field/kitchen/bakery” experiences for on-campus students through the spring semester.

For non-UCCS students and community participants, grain school lectures, community discussion groups, and expert presentations will be taught using an online platform through University Outreach, with live sessions focused on special topics, conversations, collaborative writing, and more! Grain School online is organized in 3 separate courses and is self-paced with exception of live sessions held on Thursdays from 4.30-6pm.

Grain School In The Field

Grain School in the Field is a 2-day field course organized through the University of Colorado Colorado Springs (UCCS), taught for the first time in 2021 and offered on an annual basis held at various locations throughout Colorado during the growing season. These field-based courses are open to the public and students from various universities, including UCCS.

Grain School in the field requires Grain School online as foundational course and provides a program that includes a limited number of lectures and discussions by topics experts but focuses on workshops and hands-on learning with several tracks ranging from farming and processing to culinary applications. Grain School online is a pre-requisite for Grain School in the Field. The first Grain School in the Field is scheduled for fall 2021 with topic on “Restoring the Food Ways of Corn”. The course will be held at the Excelsior Farmers Exchange in Boone CO near Pueblo, CO November 13-14, 2021. Grain School in the Field is capped at 50 participants.
