Menus of Change is a plant-forward and healthy human initiative created by the Culinary Institute of America and Harvard T.H. Chan School of Public Health. The goal is to increase the health and wellness of consumers as well as promote sustainable food choices.

Here at UCCS we embody the goals of the Menus of Change and focus on providing the students, faculty and community members with nutritious and sustainable food options on campus. Our meals are plant-forward. We develop recipes that utilize a larger amount of grains and beans, as well as using less, but better meat. By doing this, we promote the health and wellness of consumers and the planet.

Along with providing the campus with delicious meals, we also give food education to increase awareness of where their food is sourced and the importance of seasonality and diversity of food choices.
